Got Zucchini???

Chocolate Zucchini Bread


2 cups sugar

1 cup canola oil

3 eggs

3 teaspoons vanilla extract

2-1/2 cups all-purpose flour

1/2 cup baking cocoa

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon baking powder

2 cups shredded, peeled zucchini


Pre-heat oven to 350 degrees.

Either coat your 8 x 4″ loaf pans with cooking spray or spray sides with spray and cut wax paper to fit the bottoms of your pans.

In a large bowl, beat sugar, oil, eggs and vanilla until well blended. Add flour, cocoa, salt, baking soda, cinnamon and baking powder, beating until blended. Stir in zucchini. Pour batter into loaf pans. Bake at 350 degrees for 50-55 minutes or until an inserted toothpick in the center of the loaves comes out clean. Cool for 10 minutes in the pans. Remove from pans and cool completely on racks.

Yields: 2 loaves

Variation #1:  Use 1/2 cup less sugar and add 1 cup chocolate chips

Variation #2: Use 1-3/4 cups sugar, 1/3 cup oil and 2/3 cup applesauce for a healthier version of this recipe.
