It’s fall and our apples our almost ready to harvest so it’s time to make apple squares! These are delicious as a breakfast pastry or as a dessert. Enjoy!
2/3 cups corn flakes, crushed
5 cups sliced apples (minimum, more can be added)
2 1/2 cups flour
1 tablespoon sugar
1 cup shortening
1 egg, separated (see my blog post on separating eggs easily)
less than 2/3 cup milk
1 1/2 cups sugar
1 teaspoon cinnamon
In a large mixing bowl, whisk together 2 1/2 cups of flour and 1 tablespoon sugar and set aside. Measure 1 cup shortening. Crush corn flakes and set aside. Mix 1 1/2 cups sugar and 1 teaspoon cinnamon and set aside. Put 1 egg yolk in a glass measuring cup. Add enough milk to make 2/3 cup and set aside. Mix 1 1/2 cups sugar and 1 teaspoon cinnamon together and set aside. Slice apples and set aside. Beat egg whites and set aside. Now you’re ready to assemble your squares.
Add egg/milk mixture to flour mixture in large mixing bowl. Mix together just enough to form a ball of dough. Divide the dough in half. Roll half of the dough out into a rectangle 15″ x 11″ and lay on a jelly roll pan. Sprinkle crushed corn flakes over the pastry. Add sliced apples on top of the corn flakes.
Sprinkle cinnamon/sugar mixture over the apples. Roll out the other half of pastry and spread over the apples. Pinch edges of the dough together.
Spread beaten egg white on top of crust. Bake at 400 degrees for 40 minutes. When it comes out of the oven, drizzle with a glaze of powdered sugar mixed with a little water over the top. Cut into squares and enjoy!
